As a child I watched my dear Mother cook with her Soul and Spirit, never using a measuring device and seldom tasting her cooking which always turned out to be so wonderful. I always asked myself what was her secret and was determined even at an early age to spend more time watching her mesmerize our taste buds. Her Bouquet Garni (she just called it seasoning-always fresh) was one of the keys to excellent cooking.

Even at that early age, I knew I wanted to be a cook. I was determined to turn out wonderful meals that people could enjoy. I was born in the Caribbean and lived in Canada for many years and in the United States which was home base for 20 years. I have traveled as a gourmet Chef and satisfied clients around the globe. The quaint little restaurants in the cobble stone alleys of Paris and Rome, the Pensions of Florence, bistros in the quaint streets of London and Switzerland, venues on the Adriatic Coast as well as the Caribbean, Canada and the United States have influenced my cuisine. I have left my culinary stamp with satisfied gourmet enthusiast world-wide including dinners for French politicians.
I had my first restaurant when I was in my teens and went on to own 7 more over the years. I always knew that cooking was my life and I would rather be COOKING!
